We all love a wholesome and warm curry dish, especially during the colder months. We got you an easy and homemade Coconut Chicken Curry recipe which you can indulge with rice or bread, it tastes amazing either way.
COCONUT CHICKEN CURRY

250 g Boneless Chicken (chopped)
4 Tbsp Olive Oil
1 Tbsp Black Pepper
1 Tbsp Salt (adjust according to taste)
1 Tbsp Garlic & Ginger Paste
1 Full Onion (Diced)
1 Tbsp Paprika Powder
1 Tbsp Cumin Powder
1 Tbsp Curry Powder
1 Tbsp Cinnamon Powder
1/2 Tbsp Garam Masala (optional)
200 ml Coconut Milk
2 Tbsp Lemon Juice
1 Full Capsicum (chopped)
1 Full Carrot (chopped)
1 Small Green Chili (chopped)(optional)
1/2 Bowl Cooked Rice or Bread
Add 2 Tbsp of Olive oil in a pan on low heat. Let the oil heat for a minute, then add 250g of Chicken along with 1 Tbsp of salt and 1 Tbsp of black pepper to the pan. Let it cook for about 5 min, then flip the chicken on its other side and let it cook for about 10 min. Check if the chicken has cooked, if not let it cook for some more time. Remove the chicken from the pan.
On the same pan, add 2 Tbsp of Olive oil then add 1 tbsp of ginger & garlic paste and green chili. After that, add the chopped onions and sauté them for 2 minutes or until they turn golden brown. Then add all the spices, paprika, cumin, curry, cinnamon, garam masala, and salt according to taste. Mix them well, then add carrot, capsicum, and the cooked chicken. Add a lid to the pan and let it cook for 3-4 min. After that, add the coconut milk, stir and let it sit for another 2mins. Then add the lid and cook for the next 5min. Remove it from the heat and then add lemon juice and stir well.
Serve it with cooked rice or bread and then garnish it with cilantro, nuts and lemon wedges.
