Who doesn't like the occasional indulgence of Tacos, we all do. But are they all healthy enough? Don't fret cause we got you covered, with an all-vegan, healthy, and guilt-free recipe, that you can cook from the comfort of your home.

  • 1/2 Cup Carrot (grated)

  • 1/4 Cup Oatmeal Flour

  • 1 Tbsp Salt

  • 1 Large or 2 Small Potatoes (boiled)

  • 1/2 Cup Beetroot (grated)

  • 1 Tbsp Cinnamon Powder

  • 1 Tbsp Cumin Powder

  • 1/2 Tbsp Turmeric Powder

  • 1/2 Tbsp Peprika Powder

  • 1 Tbsp Pepper

  • 1/2 Tbsp Mixed Herbs

  • 1/2 Cup Peas (boiled)

  • 1/2 Cup Black Eyed Beans (boiled)

  • 4 Tbsp Olive Oil or Vegan Butter (change according to preference)

  • 3/4 Cup Onion (chopped)

  • 1 Cup Cabbage (chopped)

  • 2 Tbsp Garlic (chopped)

  • 1 Cup Cashew Nuts (sauce)

  • 1 Tbsp Garlic Paste (sauce)

  • 1/2 Cup Cilantro (chopped) (sauce)

  • 1 Small Green chilli (sauce)

  • 2 Tbsp Lemon Juice

  • 6 Pieces Wholewheat/Wholegrain/Corn Tortillas


  • 1/4 Cup Onion (sliced)

  • 1/4 Cup Cilantro (Chopped)

  • 1/4 Cup Cucumber (sliced)

  • 1/4 Cup Capsicum (sliced)

  • 1 Tbsp Lemon juice


  • Sauce: Add cashew's, salt, pepper, lemon juice, garlic paste, green chili into a blender and blend well. Then together, add grated Beetroot, Carrot, Cabbage (remove the axcess water), Cinnamon Powder, Cumin Powder, Turmeric Powder, Paprika Powder, Pepper, Mixed Herbs, chopped garlic, onion, and salt. Mix well with hands and make small patties out of them.

  • Add oatmeal flour over the patty like a cover, then to a pan on low heat add olive oil and fry the patties on both sides. Note: You can store the non-fried patties for 3 days in the refrigerator.

  • Sauce: Add cashew's, salt, pepper, lemon juice, garlic paste, green chilli into a blender and blend well.

  • Now heat up the tortillas, cut the patties into half and add them over the tortillas, add tomato ketchup (optional), then add the toppings (mentioned above), and lastly the Cashew nut sauce and some drops of lemon juice.

(You can adjust the quantities according to your preference.)

Voila! Now even you can cook your own healthy and tasty Tacos at home with ease!
